- FN3K catalyzes phosphorylation of fructosamines formed by glycation, the nonenzymatic reaction of glucose with primary amines followed by Amadori rearrangement
- Phosphorylation of fructosamines may initiate metabolism of the modified amine and result in deglycation of glycated proteins.
